Ingredients
- 2 cups all-purpose flour
- 3/4 cup canola oil
- 2 t. baking soda
- 1 ½ cup sugar
- 1 t. baking powder
- 2 cups fresh mango, diced
- 2 t. ground cinnamon
- 3 eggs, well beaten
- 1/2 cup each: raisins, chopped macadamia nuts, walnuts, grated coconut

Step 1
Preheat oven to 350 degrees. Grease and flour 2 large loaf pans. Sift flour, soda, baking powder and cinnamon into a small bowl. In large mixing bowl, combine eggs, oil, and sugar. Combine with flour mixture; blend well. Fold in mango, raisins, macadamias, and coconut. Pour into prepared loaf pans. Bake 45 to 60 minutes or until bread is golden brown. Bread is done when a toothpick inserted in center of loaf comes out clean. Let loaves cool in pans 10 to 15 minutes, then remove from pans and let cool completely on racks.
