Ingredients

  • For crust:
  • 25 chocolate wafer cookies, crushed
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • Filling:
  • 18 oz. chocolate chips
  • 1/4 cup sugar
  • 1 T water
  • 5 eggs, separated
  • 1/2 t. mint extract
  • 1 1/2 cups whipping cream

Step 1

In food processor, crumble chocolate wafers. Reserve 1/4 cup for topping. Mix remaining crumbs with sugar and butter. Pat into the bottom of a 9 inch springform pan.

Combine chocolate chips, sugar and water in double boiler. Cook over low heat until chocolate is melted.

Beat egg yolks in small bowl for 1 1/2 minutes. Add chocolate mixture and mint extract. Beat for another 3 minutes. Transfer to a large bowl.

Beat egg whites until stiff. Fold egg whites into chocolate mixture.

Whip cream. Reserve some for garnish.

Fold in whipped cream. Pour filling into crust. Refrigerate overnight.

Unmold pie. Garnish with remaining whipped cream, tinted with a drop of green food coloring. Sprinkle with reserved chocolate wafers.
