Ingredients
- 8 large red potatoes
- 2/3 cup Extra Virgin Olive Oil
- 1/2 cup Champagne Vinegar
- 1/3 cup chopped fresh parsley

Step 1
Boil potatoes for about 25 minutes. Drain, cool and slice potatoes.
In a large bowl, combine Extra Virgin Olive Oil, Champagne vinegar and parsley. Add potatoes and toss to coat.
