Cheesecake Surprise Cake Pops

Use a patry bag or squeeze bottle, fitted with a fine tip to inject filling into cake pops

Ingredients
- FOR CAKE POPS:
- 1 1/2 cups all purpose flour
- 1 1/4 tsp baking powder
- 1/4 tsp salt
- 1 cup granulated sugar
- 6 tbsp unsalted butter, softened
- 2 large eggs, at room temperature
- 1 tsp vanilla extract
- 2/3 cup milk at room temp
- nonstick baking spray
- Graham wafer crumbs for garnish
- FOR CREAM CHEESE GLAZE:
- 3 oz cream cheese, softened
- 3 tblsp butter, melted
- 1/2 cup confectioners' sugar
- 5 to 6 tsp milk
- 1/2 tsp vanilla extract
- FOR CREAM CHEESE FILLING:
- 2 oz cream cheese softened
- 1 tbsp butter, softened
- 1/4 cup confectioners' sugar
- 1/2 tsp vanilla extract

Step 1
FOR CAKE POPS:
1. In a small bowl, whisk together flour, baking powder, and salt. Set aside.
2. In a large bowl, using an electric mixer on medium high speed, beat sugar and butter for 1 to 2 minutes or until fluffy. Add eggs, one at a time, beating wella fter each addition. Beat in vanilla. add flour mixture alternately with milk, making three additions of flour and two of milk and beating on low speed until smooth.
3. Spray cake pop well with nonstick baking spray. Fill each well with about 1 tbsp batter. bake for 4 to 6 minutes or until a tester inserted in the center comes out clean. Transfer cake pops to a wire rack set over a sheet of foil or waxed paper to cool. Repeat with the remaining batter.
4. Using the pastry bag or squeeze bottle, inject cream cheese filling into the center of each cake pop.
5. Drizzle or pipe cream cheese glaze over filled cake pops and immediately sprinkle wtih graham wafer crumbs. return cake pops to the wire rack to set.
FOR CREAM CHEESE GLAZE:
1. In a medium bowl, using an electric mixer on medium high speed, beat cream cheese and butter for 1 minutes or until light and creamy. Gradually beat in sugar until blended. Beat in 5 tsp milk and vanilla.
FOR CREAM CHEESE FILLING:
1. In a small bowl, using an electric mixer on medium speed, beat cream cheese and butter for 1 minutes or until fluffy. Gradually beat in sugar and vanilla.
