Ingredients

  • 6 c romaine lettuce chopped
  • 1 lb 93% lean ground beef
  • 1 pkg 1.75 oz pkg low sodium taco seasoning
  • 1/2 c cooked black beans
  • 1 lg tomato
  • 1 oz corn - canned or frozen either one works
  • 1/2 c onion
  • 2 oz low fat shredded cheddar cheese
  • 2 Tbsp low fat ranch dressing
  • salsa - as much as you want

Preparation

Step 1

In a pan over medium heat brown ground beef. Drain fat.
Add taco seasoning packet.

Dice tomato and mince onion and add to the ground beef.

Once the onion is tender add the corn and black beans and cook a few minutes until everything is throughly heated.

Top Romaine lettuce with beef mixture and salsa and salad dressing and shredded cheese and enjoy!
