Ingredients

  • FOR CAKE:
  • 2 eggs
  • 1 20oz can crushed pineapple, drained
  • 2 cups all purpose flour
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 teas baking soda
  • 1 cup chopped walnuts
  • FOR FROSTING:
  • 1 3oz package cream cheese softened
  • 1/4 cup butter, softened
  • 1 teas vanilla extract
  • 2 cups powdered sugar
  • 1/2 teas ground ginger
  • chopped walnuts for garnish

Preparation

Step 1

FOR CAKE:

In large bowl beat eggs until light and fluffy. Add remaining ingredients except walnts. Mix well by hand.
Stir in walnuts and spread the batter evenly in an engreased 9x13 inch baking pan. Bake at 350 degrees for 45 to 50 minutes or until a toothpick inserted in the ceneter comes out clean. Cool cake in the pan on a wire rack.

FOR FROSTING:

In a small mixing bowl beat together the cream cheese and butter. Beat in vanilla. Gradually add powdered sugar and ginger, beating until frosting has a nice smooth consistency. Spread on cooled cake and sprinkle top with chopped walnuts.
