Black Forest Mousse

Black Forest Mousse ticks all boxes; it is vegan, quick as a shake to make and uber healthy, but with no
compromise on sheer divine moussy-ness. This makes a delicious dessert or a breakfast that will keep you
going well into noon due to the high protein content.

Ingredients
- 1 block of silken tofu
- Generous handful of fresh or defrosted
- black currants and/or blackberries
- 1/2 tsp cinnamon powder
- 1 Tbsp cocoa powder
- Squidge of Agave Nectar

Preparation
Step 1
1. Drain tofu and place with the berries
in a food processor or use a hand held
mixer and whiz for a few moments.
2. Add the other ingredients and give
another whiz.
3. Pile into two glasses and devour with
your loved one.
Variations on the theme:
A sprinkling of sunflower seeds and/
or a shower of grated nutmeg on the
top.
For a trifle kind of affair, place
ground linseeds in the bottom of the
glass, then mix in some cinnamon
and a dessert spoon of a nutty kind
of oil like hemp and pile the mousse
on top; dig deep with your spoon!
