Ingredients

    lb beef chuck or round, fat trimmed

  • 1/4

    cup soy sauce

  • 1

    clove garlic

  • 1/2

    tsp ginger

  • 1/4

    cup salad oil

  • 1

    cup green onion, thinly sliced

  • 1

    cup red or green pepper, cut in 1" squares

  • 2

    stalks celery, thinly sliced

  • 1

    Tb corn starch

  • 1

    cup water

  • 2

    tomatoes, cut in wedges

Directions

Cut beef into strips 1/8" thick. Combine soy sauce, garlic & ginger. Add beef, toss & set aside. Heat oil in fry pan. Add beef & toss over high heat until browned. Taste meat. If not tender, cover & simmer 30-40 minutes on low heat. Turn heat up. Add veggies. Toss until veggies are tender crisp - about 10 minutes. Mix corn starch & water. Add to pan. Stir & cook until thickened. Add tomatoes & heat through. Can prepare beef ahead & refrigerate. Add veggies and finish cooking later.
