Ingredients

    Tbsp. plus 1 tsp. olive oil

  • 6

    cloves garlic, minced or crushed through a press

  • 3

    cups low-sodium chicken broth

  • 1 1/2

    cups canned crushed tomatoes

  • 1

    cup sliced zucchini

  • 1/2

    cup thinly sliced carrots

  • 1/2

    cup thinly sliced celery

  • 5

    oz. potato, diced

  • 3/4

    oz. alphabet pasta

  • 3/4

    tsp. dried basil

  • 3/4

    tsp. oregano

  • Parmesan cheese

Directions

In a medium saucepan over medium-high heat, warm the oil until hot but not smoking. Add garlic and sauté for 1 minute, stirring constantly. Add broth, tomatoes, zucchini, carrot, celery, potato, pasta, basil and oregano. Bring to a boil over medium-high heat. Cover and reduce heat to low. Simmer until pasta and vegetables are cooked through, approximately 20-30 minutes. Serve with parmesan cheese
