Ingredients

  • Meringue:
  • Juice and Grated Rind of 1 Lemon
  • 1 Cup Sugar (scant)
  • 2 Egg Yolks (slightly beaten)
  • 2 Tablespoons Corn Starch in 1/4 Cup Cold Water
  • 1 Cup Boiling Water
  • Baked Pie Shell
  • 2 - 3 Egg Whites
  • 1/4 Cup Sugar

Preparation

Step 1

Combine all ingredients in saucepan and cook over medium heat; stirring constantly until mixture thickens. Pour into a baked pie shell. Top with meringue (beat egg whites until stiff, add 1/4 cup sugar). Brown at 400° for 10 - 12 minutes.
