Ingredients
- Meringue:
- Juice and Grated Rind of 1 Lemon
- 1 Cup Sugar (scant)
- 2 Egg Yolks (slightly beaten)
- 2 Tablespoons Corn Starch in 1/4 Cup Cold Water
- 1 Cup Boiling Water
- Baked Pie Shell
- 2 - 3 Egg Whites
- 1/4 Cup Sugar

Preparation
Step 1
Combine all ingredients in saucepan and cook over medium heat; stirring constantly until mixture thickens. Pour into a baked pie shell. Top with meringue (beat egg whites until stiff, add 1/4 cup sugar). Brown at 400° for 10 - 12 minutes.
