Ingredients
- 2 8oz. cans nsa tomato sauce
- 3 small Roma tomatoes, diced
- 1/3 cup white onion, chopped
- 1/3 cup green bell pepper, chopped
- 1/3 cup red bell pepper, chopped
- 1 Tbs. parsley flakes
- 1 Tbs. fresh garlic, minced
- 1 tsp. basil
- 1 tsp. oregano
- 1/4 cup red wine vinegar
- 2 packets Spenda
- 1 lb. gorund turkey breast
- 2 scallions, chopped (green only)
- 1 tsp. black pepper
- 1 tsp. oregano
- 1 tsp. basil
- 2 egg whites

Preparation
Step 1
Sauce:
1. In small sauce pan, saute the onion, bell pepers and parsley flakes over medium-high heat for a minute or two.
2. Add the tomato and tomato sauce and lower heat to low.
3. Add garlic, basil, oregano, red wine vinegar and 2 packets of Spenda to sauce pan, stir well and let simmer for 5 minutes.
4. Do a tast test; add more kick or sweet as needed. continue simmering 5 more minutes or until sauce thickens slightly.
Meatballs:
1. Mix turkey, green onions, spices and egg whites together thoroughly in a large mixing bowl.
2. Make golf ball-sized meatballs and place on cookie sheet, lightly sprayed with cooking spray
3. Bake at 350 degree for 20 mintues, or until lightly browned.
Combine your sauce and meatballs in a large enough pot and warm for about 5 mintues as the flavors join.
