Ingredients
- 8 manicotti noodles
- 1 1/2 cups ricotta or cottage cheese
- 1 cup grated mozzarella cheese
- 1/2 cup grated parmesan cheese
- 1 egg beaten
- 1/4 cup finely chopped parsley
- 1/4 tsp salt
- 1/2 tsp pepper
- 1 jar spaghetti sauce
- 1/2 cup water
- 1/2 cup grated mozzarella cheese

Step 1
Cook manicotti according to cooking instructions. Prepare filling. Place ricotta cheese in a mixing bowl. If using cottage cheese, press cheese through a sieve. Stir in 1 cup mozzarella, parmasan, egg, parsley, and seasonings. Mix well. Fill manicotti with mixture, using a teaspoon. Combine sauce with water; pour half the mixture into a 7" x 11" baking dish. Arrange filled manicotti in a dish and top with remaining sauce. Sprinkle with 1/2 cup grated mozzarella cheese. Cover with foil paper. Bake at 190°C (375°F) for 35 to 40 minutes. Place under the broiler briefly, if desired.
