Gooey Butter Cakes

Here are some of the many variations for this knock off
of a popular St. Louis, MO dessert. It seems this came
about when a 1930's German baker got the proportions wrong. Thank you! Experiment with your favorite cake mix and add-ins

Ingredients
- Filling:
- Cake
- 1 (18.25) yellow cake mix
- 1 egg
- 1/2 cup (1 stick) butter, melted
- 1 (8 oz)package cream cheese, softened
- 2 eggs
- 1 teaspoon vanilla
- 1 (16 oz) box powdered sugar
- 1/2 cup(1 stick) butter melted

Step 1
1. Preheat oven to 350 degrees.
2. Lightly grease a 9x13 pan.
3. In a large bowl, combine the cake mix, egg and
butter.
4. Mix well.
5. Pat into the bottom of pan and set aside.
6. Still using an electric mixer, beat cream cheese until
smooth; add eggs and vanilla. Dump in powdered
sugar and beat well.
7. Reduce speed and slowly pour in butter. Mix well.
8. Pour filling on cake base and spread evenly.
9. Bake for 45-50 min. Don’t overcook, the center
should be a little gooey.
10. Cool and cut into squares.
*Pumpkin Gooey: Follow the original recipe, adding a 15 oz can of pumpkin pie filling and an extra egg to the
cream cheese filling.
Bake as usual, remove from the oven and allow to cool.
Top each piece with a pecan half & whipped cream.
*Pineapple Gooey: Add a 20 oz can of drained crushed pineapple and an extra egg to the cream cheese filling.
*Lemon Gooey: Use a lemon cake mix, add the juice (about ¼ cup) and the zest of 2 lemons to the cream cheese filling.
*Carrot Cake Gooey: Use a spice cake mix, add 1 cup chopped nuts and 1 ½ cup finely grated carrots to the cream cheese filling.
*Peanut Butter Gooey: Use a chocolate cake mix, add 1 cup creamy peanut butter and an extra egg to the cream cheese filling. Sprinkle 1 cup chopped peanuts on top of the batter.
*Chocolate Chip Gooey: Use either a yellow or chocolate cake mix. Sprinkle 1 cup chocolate chips and 1 cup chopped nuts on top of the filling.
*Banana Gooey: Use a yellow cake mix. Beat 2 ripe bananas and an extra egg into the cream cheese filling.
*Nutty Gooey: Using a yellow cake mix, add 1 cup chopped nuts to the cake mixture.
*Chippy Gooey: Stir 1 cup white chocolate chips, peanut butter chips, butterscotch chips or toffee bits into the cream cheese filling
*Coconut Gooey: Mix 1 cup chopped pecans into the cake mix. Add 1 cup coconut to the cream cheese filling.
*German Chocolate: Use German chocolate cake mix, press 1 cup semi-sweer chocolate chips, 1 cup chopped pecand and 1 cup coconut into the cake layer before topping with the cream cheese
*Toffee: Fold 1 cup almond toffee or chocolate toffee bits into the cake batter
*Elvis: Add 2 eggs, 1/2 cup peanut butter and1 whole banana to the filling
