Ingredients

  • 1

    tablespoon butter

  • 2

    cloves garlic, minced

  • ½

    cup sun-dried tomatoes, dry packaged chopped

  • 1

    cup chicken broth

  • 1

    cup heavy cream

  • 1

    pound chicken breast, pounded flat

  • salt and pepper to taste

  • 2

    tablespoons vegetable oil

  • 2

    tablespoons chopped basil

  • 8

    ounces fettuccine pasta

Directions

1. Melt butter, add garlic, cook 30 seconds. Add tomatoes and 3/4 cup chicken broth. 2. Increase heat to boil, lower heat and simmer uncovered for 10 min. 3. Add cream and bring to a boil, stir. Simmer over medium heat until thick. 4. Sprinkle chicken with salt and pepper; cook and oil in large skillet about 4 min. per side. 5. Heat 1/4 cup of chicken broth to boiling. Add cream sauce, stir in basil. 6. Boil the noodles to Al Dante. Toss with some sauce. 7. Slice chicken, add to sauce and serve. If preferred, you could top with Parmesan or mozzarella cheese.
