Ingredients
- 2 cups black beans
- 8 cups cold water
- 1 clove garlic
- CRUSHED
- 1 ham hock
- 2 T parsley
- 2 cups chopped onions
- 1/4 cup butter
- 1/2 t salt/fresh pepper
- 1/2 cup dry sherry - optional

Preparation
Step 1
Cover beans with water and soak overnight. Drain and fill pot with 8 cups cold water and ham bone. Cook on low heat until soft. Saute onions, garlic in butter and add to pot. Add all other ingredients except sherry. Cook on loww heat 3 hours. Remove bone and cut off meat. Return meat to pot, add sherry. Heat just until hot and serve. Garnish with cheese.
