Ingredients

  • 2 green onions, chopped
  • 1/4 cup bell peppers, chopped
  • 2 whole garlic cloves, minced
  • 2 oz. of chicken breast, cut into chunks
  • 1/2 cup of broccoli spears
  • 1/2 cup of cauliflower, cut into chunks
  • 1/4 cup bean sprouts
  • 1/2 cup brown rice, cooked
  • 1/2 cup of carrot slices (optional)
  • 3 Tbs. low sodium soy sauce

Preparation

Step 1

1. Dry fry onions, peppers, and garlic in a non-stick skillet or work until slightly caramelized.
2. Add chicken and cook until done.
3. Add the broccoli and cauliflower and simmer until the veggies are tender.
4. Remove everything from the skillet and aset aside.
5. Spray the pan with a small amount of cooking spray.
6. Put rice in and stir until heated through.
7. Add two tablespoons soy sauce and some seasoning of your choice.
8. When the rice is hot, add the chicken and veggies back in along with the rice, bean sprouts, and the last tablespoon of soy sauce.
9. Stir all together and serve.
