Ingredients

  • CRUST
  • 1/2 cup butter (or hard margarine)
  • 2 cups chocolate wafer crumbs
  • FILLING
  • 4 cups coffee ice cream, softened (see note)
  • TOPPING
  • 1/3 cup cocoa
  • 3 tbsp butter (or hard margarine)
  • 2/3 cup granulated sugar
  • 1/3 cup half-and-half cream (or homo milk)
  • 1 tsp vanilla
  • GARNISH
  • 1 cup whipping cream
  • 1 tbsp granulated sugar
  • 1/2 tsp vanilla
  • 1 - 2 semisweet chocolate baking squares (1 oz each)

Preparation

Step 1

Crust: Melt butter in small saucepan. Stir in wafer crumbs. Press in bottom and up sides of 9 inch pie plate. Bake in 350°F (175°C) oven for 10 minutes. Cool.

Filling: Spoon ice cream into shell, spreading carefully. Freeze until firm.

Topping: Put all 5 ingredients into heavy medium saucepan. Heat and stir over medium heat until just boiling. Remove from heat. Cool for 10 minutes. Smooth over ice cream filling. Return to freezer.

Garnish. Just before serving, beat whipping cream, sugar and vanilla until stiff. Spread over top. Sprinkle with shaved chocolate. Serve 10.

Note: If you cannot buy coffee ice cream, dissolve 2 tsp. instant coffee in 4 tsp. hot water. Mix into softened vanilla ice cream.

Variation: For a deep pie, double amount of ice cream and use a springform pan.
