Preparation

Step 1

Preheat oven to 375 degrees.
Salt and pepper roast.
Roast should be at room temperature on a rack in a shallow pan before placing in the oven.
Roast 1 hour and turn oven off, leaving for 3 hours.
OR
Preheat oven to 324 degrees.
Place roast on rack, fat side up.
Cook 30 minutes per pound.
Check at 40 minutes and 1 hour and 20 minutes.
