Ingredients
- 1 medium pineapple or one cup chopped fresh pineapple
- 3 Tbs. nsa chicken broth
- 4 green onions, chopped
- 8 oz. chicken breast, cut into thin strips
- 1 large green bell pepper, cut into thin strips
- 1 large red bell pepper, cut into thin strips
- 1 tsp. ginger root, grated
- Dash hot pepper sauce (if desired)
- 2 Tbs. low sodium terriyaki sauce
- 2 cups brown rice, already cooked

Preparation
Step 1
1. In a wok or large non-stick frying pan, heat chicken broth until sizzling. Add onions and stir-fry until tender, approx. 1 minute.
2. Add chikcen; stir-fry 2 mintues. Add bell peppers and ginger root.
3. Season with hot pepper sauce; stir-fry 2 more minutes.
4. Add rice and pineapple chunks; stir-fry until hot. Season with pepper.
