Ingredients

  • 4 whole skinned boned chicken breasts
  • 1 1/2 - 2 1/2 cups of mayonnaise
  • 1/2 tsp sugar
  • 1/2 tbs curry powder
  • 1/2 tbs fresh lemon juice

Preparation

Step 1

Poach chicken - cover chicken completely in water in pot..bring to a boil, then turn to simmer and cover for 10 minutes. Take off burner and let sit in warm place for 25 minutes.

When chicken cools, cut into 1/2 cubes - or shred - mix in mayo, sugar and curry powder - mix to taste. Should be light yellow, not dark

Add lemon juice to taste and mix. Mix in mayo mixture to chicken and refrigerate for four hours.

Best served in pita bread with tomatos
