Ingredients
- 1- 1/2 cups mushrooms
- 1 medium zucchini chopped
- 1 medium yellow pepper chopped
- 1 small onion sliced
- 1 cup asparagus 1 inch pieces
- 1 Tbsp olive oil
- 1 tsp oregano, thyme, rosemary
- 1/2 tsp salt
- 1-1/4 cups uncooked orzo pasta
- 1/4 cup feta cheese
Preparation
Step 1
1) Place vegetables in a 15"x10"x1" baking pan coated with cooking spray. Drizzle with oil, sprinkle with seasonings & toss to coat. Bake at 400° for 20-25 minutes or until tender, stir occasionally.
2) Meanwhile, cook orzo according to package instructions. Drain, stir in roasted vegetables & sprinkle with cheese.
