Ingredients
- 1 1/4 cups all purpose flour
- 1 1/8 cup sugar
- 4 tablespoons cocoa powder
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground ginger
- pinch of salt
- 1 cup mayonnaise(low fat version)
- 1 cup cold water
- 1 tsp pure vanilla extract

- filling and frosting;
- 4 tablespoons warm apricot jam
- 1 tablespoon rum or brandy(optional)
- fresh whipped cream(use double cream)
- chopped walnuts or almond slivers

Step 1
preheat oven to 350. prepare two 9 inch non-stick layer cake pans by placing a circle of wax paper on the bottom. (this is essential since cake is very fluffy) sift dry ingredients together in a large mixing bowl and add mayonnaise, water and vanilla blend well with a wooden spoon until smooth. beat for 2 minutes by hand for 45 seconds by using an electric mixer at medium speed.
pour mixture carefully into pans. place in the middle of oven and bake for approximately 25-30 minutes until cake starts to pull away from the sides of the pans and center of cake feels spongy to the touch of your finger.
remove from oven.
cool cake in pans for five minutes before turning onto cooling rack.
carefully remove wax paper and allow cake to col completely. mix warmed jam with rum or brandy and sandwich layers of cake together with this mixture. work carefully in order not to break the cake. spread fresh whipped cream on top of cake and sprinkle with nuts. allow cake to stand at least 1 hour before serving.
