Ingredients
- 2 T salad oil
- 4-6 pork chops 3/4" thick
- 1/2 lb mushrooms or small can
- 1 medium onion
- 1 cup water
- 3/4 t salt
- 1/2 t prepared mustard
- 1 medium tomato or canned
- 1/4 cup milk (whole if possible)
- 1 T all purpose flour

Step 1
Over medium heat in hot salad oil, cook chops until brown on both sides; remove chops to plate. In drippings, remaining in skillet over medium heat, cook mushrooms, onion until lightly brown. Return chops to skillet. Add water, salt, mustard and tomato stirring to loosen brown bits from bottom of skillet. Over high heat, heat to boiling. Reduce to low, simmer 25 minutes, covered.
In a cup stir milk and flour until blended. Gradually stir flour mixture into simmering liquid in skillet. Cook, stirring constantly until slightly thickened.
