  • 4 medium zucchini
  • 1 can cream of celery soup
  • 8 ounces sour cream
  • 4 cups stuffing mix
  • 1/3 cup butter, melted

Step 1

Preheat oven to 350. Lightly grease a 3 quart rectangular baking dish. In a lightly oiled 12-inch skillet, cook breakfast pattys until browned.
Meanwhile, halve zucchini lengthwise; cut crosswise into 3/4 inch pieces. Add zucchini to breakfast pattys in skillet. In a small bowl, combine soup and sour cream; stir into zucchini mixture. In a large bowl, combine stuffing mix and melted butter.
Spoon half of the stuffing mixture into the prepared baking dish. Spread zucchini mixture evenly over stuffing. Spread remaining stuffing mixture over top. Bake, covered, about 30 minutes or until heated through.
