Ingredients

  • 1 cup long grain rice
  • 1/4 lb. chorizo or Neese's sausage
  • 1/4 cup vegetable oil
  • 1/3 cup chopped onion
  • 1 medium tomato, peeled and chopped
  • 1 T cumin
  • 1/4 cup frozen peas
  • 2 cups chicken broth
  • Salt
  • Avocado slices
  • Tomato wedges
  • 1/2 T chili powder

Preparation

Step 1

Rinse rice. Remove casing from chorizo, Fry until it crumbles. Remove. Add 2 T oil, add rice. Cook and stir over medium heat 3-5 minutes. Add onion. Cook til tender. Add tomato. Cook til tomato can be mashed into rice. Add sausage peas and broth. Cover and simmer til most liquid is absorbed. Reduce and steam 30-40 minutes til rice is tender. Taste, add salt, if needed. Garnish with avocado slices and tomato wedges.
