Breaded Pork Chops with Bacon Dressing Slaw

Ingredients
- Breaded Pork Chops-
- 4 bone-in pork loin chops, 3/4-1" thick, about 6-8 oz each
- Salt and Pepper
- 1/4 cup all-purpose flour
- 2 eggs, beaten
- 2 cups bread crumbs
- 1/4 cup vegetable oil
- Bacon Dressing Slaw-
- 6 strips of bacon, diced
- 1 cup onions, diced
- 1 cup tart apples (Gala or Braeburn) cored, diced
- 1 tbs all-purpose flour
- 2/3 cup apple cider vinegar
- 1/3 cup sugar
- 1/4 cup chicken broth
- Salt and pepper to taste
- 8 cups green cabbage, shredded
- 3 tbs chopped fresh parsley

Step 1
Preheat oven to 400 degrees.
Pound chops 1/2" thick. Season with salt and pepper.
Dredge chops in flour, shaking off excess, then dip in egg, letting excess drip back into bowl. Then coat with bread crumbs, patting so that they adhere.
Heat oil in a large skillet over medium heat. Saute 2 chops at a time, turning once, until golden on both sides - about 6 minutes total.
Transfer to baking sheet, then repeat procedure with remaining chops. Place in oven and roast about 6
minutes more.
Serve with hot slaw.
For Slaw-
Fry bacon over medium high heat. Pour off all but 1/4 cup drippings.
Add onions and apples and cook over medium heat until softened, about 5 minutes. Whisk in flour and cook for 2 more minutes.
Stir in vinegar, sugar, broth, salt and pepper. Add cabbage and toss to wilt, 4-5 minutes. Stir in parsley just before serving.
