Preheat oven to 350 degrees. Place pistachios on a baking sheet and bake in oven until light golden, 4 to 7 minutes.

Ingredients
- 3/4 c pistachios, lightly toasted
- 1 T canola or vegetable oil
- 1/4 c amaranth
- 1/4 c quinoa
- 3/4 c Basmati rice
- 1/4 c millet
- 1/2 c dried apricots, chopped
- 3/4 t kosher salt, plus extra to taste
- Freshly ground pepper, to taste
- 2 c chicken stock
- 1 c water

Preparation
Step 1
1. Heat the oil in a saucepan over medium heat. Add amaranth, quinoa, rice and millet and stir until the grains are coated and hot, 1 to 2 minutes.
2. Increase the heat to high. Add the apricots, 3/4 teaspoon salt, pepper, stock and water and bring to a boil.
3. reduce the heat to low and simmer coverfed until the grains are tender and the liquid is absorbed, 25 minutes.
4. Add the pistachio and fluff with a fork to mix. Season to taste with salt and pepper.
