Ingredients
- 3 eggs
- 1 C oil
- 2 t vanilla
- 2 C white sugar
- 2 C raw grated zucchini
- 2 C flour
- 1 t baking soda
- 1 t cinnamon
- 1 t salt
- 1/2 t ginger
- 1/2 t nutmeg
- 1/4 t baking powder
- 1/2 C rolled oats
- 1 (3.4 oz) package butterscotch pudding mix
- 1 C nuts
- Lemon Frosting
- 2 C icing sugar
- 1/2 t lemon zest
- 2 T lemon juice
- 1/4 C butter

Step 1
Preheat oven to 350
Mix bread ingredients and spread into 2 greased, floured, wax paper lined pans. Bake 1 hour.
Mix frosting and spread over loaves when cool.
