Ingredients
- 1 cup mushroom soup
- 1 cup milk
- 2 eggs
- 2 T oil
- 2 cups cooked rice
- 1 package frozen spinach, cooked
- 1/2 lbs sharp cheese
- 1 medium onion
- 2 dashes thyme
- juice of 1 lemon
- 1 t red pepper
- 1 t accent

Preparation
Step 1
Season and cook spinach and rice. Mix all. May prepare ahead.
Note: I do not use the can of cream of mushroom soup. Instead I use 2 cups of milk and saute 1 pound of fresh mushrooms.
