Ingredients

  • 5 lbs chicken, boneless, skinned breasts and thighs
  • 1/2 head garlic, peeled and pureed
  • 2 tbsp oregano
  • salt and pepper
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 1/2 cup prunes, pitted (omitted)
  • 1/4 cup green olives
  • 1/4 cup capers, with juice
  • 3 bay leaves
  • 1/2 cups brown sugar
  • 1/2 cups white wine
  • 2 tbsp italian parsley, finely chopped

Preparation

Step 1

Large bowl combine chicken, garlic, oregano, pepper, salt, vinegar, olive oil, prunes, olive, capers and juice, bay leaves. Cover and marinate, refrigerate overnight

Preheat oven to 350

Place chicken in large, shallow baking pan, spoon marinade evenly.

Pour white wine over the chicken and sprinkle with brown sugar.

Bake 50 mins to 1 hour basting frequently with pan juices.

Transfer chicken, prunes, olives and caper to serving platter with a slotted spoon. Moisten with pan juices and sprinkle with parsley.
