Ingredients

  • Sauce:
  • 5 ounces dates
  • 1/2 cup + 6 Tb butter at room temp
  • 1 cup dark brown sugar
  • 1 1/4 cups ap flour
  • 2 tsp baking powder
  • 4 eggs room temp
  • 1 tsp vanilla
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp cloves
  • 1/2 tsp nutmeg
  • 1/2 cups dark brown sugar
  • 2/3 heavy cream
  • 1/2 cup butter at room temp.

Preparation

Step 1

Put dates(without seeds) in a saucepan w/ water & simmer 5 min over low heat. Drain & put dates in food processor & purée scraping sides as needed. Add butter, sugar & process. Add flour, baking powder, eggs, vanilla, spices and process but do not over process.
Prepare a 9 inch square cake pan w/ butter & parchment pour in batter and bake at 350 degrees for 40-45 min

Sauce:
In a small saucepan combine sugar, heavy cream & butter. Heat until sugar dissolves approx. 5 min.continue heating at a bubble 10 more min until thick caramel. Serve warm over cake.
