Ingredients

  • Cornbread Stuffing:

  • 4

    cups crumbled cornbread (made from Jiffy box mix)

  • 1

    cup chopped celery

  • 1/2

    cup chopped onion

  • 1

    tsp salt

  • 1/2

    tsp sage

  • 1/3

    cup melted butter

  • Chicken and Dressing:

  • 1

    chicken, stewed - meat removed and reserved

  • 2

    sticks butter

  • 1

    cup flour

  • salt and pepper

  • 4

    cups chicken broth

  • 2

    cups milk

Directions

Prepare the Stuffing: 1. Make cornbread from 2-3 boxes Jiffy. 2. Melt butter and saute celery and onion until softened. 3. Combine all ingredients together in a large bowl. 4. Pour into 9x13 buttered baking dish. 5. Top with chicken meat. Make the Dressing: 1. Melt butter in large saucepan. 2. Whisk in flour. Cook for a minute or two. 3. Add broth and milk and stir constantly until thickened. 4. Pour dressing over chicken and stuffing. 5. Bake at 350 for 1 hour.
