Ingredients

  • Black peppercorns
  • caraway seeds
  • fennel seeds
  • thyme
  • rosemary
  • bay leaves
  • Blend all above in Vitamix
  • Kosher salt
  • super fine sugar
  • 2 teaspoons curing salt

Preparation

Step 1

Blend all the spices in Vitamix. Add to the salt, sugar and curing salt.

Rub into meat, cover with saran wrap. Cure for 5-14 days, flip every w days.

Unwrap cured bacon, rinse off the cure. Bake at 200 degrees until 155 degrees, approx. 3 hours. Cool.

Cut into slices and bake until cooked.
