Ingredients
- Rice, 1 cup, short grain, i.e. Calasparra rice
- Chicken, 2-3, cut in small pieces
- Seafood, such as mussels, clams, and/or shrimp
- Chorizo, 1-2 links
- Garlic, 1 fist
- Onions, 1 medium, roughly cut
- Red pepper, 1 - sliced lengthwise
- Smoky pepper
- Tomatoes, 2 small, diced
- Chicken broth
- Olive oil
- Saffron, 1 tsp. with 1 tbsp. warm water
- Cumen, 1 tsp.
- Paprika, 1 tsp.
- Salt and Pepper
- Meyer lemon

Step 1
Using a large round flat pan, heat up the olive oil. Add 2 cloves of garlic and sauté chicken until cooked.
Remove chicken. Add more oil, and sauté onions, peppers, chorizo, and rest of garlic. Add rice and sauté. Add saffron, chicken broth, tomatoes, and rice. Keep adding broth until rice is cooked.
When rice is almost cooked, add seafood. Take off flame once mussels are open and shrimp is pink.
Add Meyer lemon to side for squeezing on seafood.
