Mini Meatloaves

Ingredients
- 2 tbsp Italian salad dressing or plain veg oil
- 3/4 cup shredded zucchini
- 3/4 cup shredded carrot
- 1 onion diced
- 1 cup pasta sauce divided
- 1/3 cup quick oats
- 1 egg beaten
- 1/2 tsp salt and pepper
- 1 lb (500 g) lean ground beef

Step 1
Preheat oven to 375. Heat the salad dressing or oilin a nonstickskillet on med heat. Saute the carrots, zucchini, onion and garlic for 5 -7 min or until softened. If using salad dressing be aware that it will sting your eyes a bit.
Cool slightly, transfer to large bowl and stir in 1/2 cup of the pasta sauce, oats, egg, salt and pepper. I sometimes add some pesto and a splash of lea & perrins. Add the beef and mix to combine.
Spray muffin tin, or use a silicon pan. You will get anywhere from 8 - 10 muffins. Press the mixture into the individual rounds. Spoon the remaiining pasta sauce on each muffin until used up. Bake for 30 min,or until meat registers 160 - F or 71 - C. Cool for 5 min before serving
