Irresistable Peanut Butter Cookies

Ingredients

• 3/4 c. creamy peanut butter
• 1/2 c. shortening
• 1-1/4 c. light brown sugar, firmly packed
• 3 Tbsp. milk
• 1 tsp. vanilla
• 1 egg
• 1-3/4 c. flour
• 3/4 tsp. salt
• 3/4 tsp. baking soda

Preparation

Step 1

In large bowl, combine peanut butter, shortening, sugar, milk and vanilla. Beat at medium speed until well blended. Add egg. Beat until just blended.

Combine flour, salt and baking soda. Add to creamed mixture at low speed. Mix just until blended. Drop by heaping teaspoonfuls two inches apart onto ungreased baking sheet. Flatten slightly in crisscross pattern with tines of fork.

Bake at 375 degrees for 7-8 minutes, or until just beginning to brown. Cool two minutes on baking sheet. Remove cookies and place on sheet of foil to cool completely.
