Ingredients

  • 1/2 cup quick cooking oats
  • 1/2 cup lowfat buttermilk
  • 1/2 cup skim milk
  • 2 egg whites
  • 1 tbsp canola oil
  • 2 tbsp brown sugar, packed
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/2 cup whole wheat flour
  • 1/2 cup all purpose flour
  • 1 tsp cinnamon
  • 1/2 tsp baking soda

Preparation

Step 1

In a medium bowl combine oats, buttermilk, and milk. Set aside 15-20 min.

Beat in egg whites and oil. Add the sugar, salt and cinnamon then the baking powder, baking soda, and flour. Stir until just moistened.

Heat griddle. Pour about 1/8 cup batter. Cook.

Makes about 12 small pancakes.
