Step 1
Get a 3 lb flank steak. Make a dry rub of 1 tbsp cumin, 1 tbsp coriander, 1 1/2 tsp smoked paprika, 1 1 1/2 tsp salt, refrigerate uncovered 6 to 12 hours. For reduction combine 2 c pomegranate juice, 1/2 c red wine, 1 tbsp soy sauce, and 2 1/2 tbsp sugar. Then add 2 large minced garlic cloves and bring to a boil, then lower heat to medium and cook about 25 minutes. Whisk in 2 tbsp chilled butter and 3 tbsp fresh thyme leaves. Add salt and pepper. Cook steak and top with sauce. WE TRIED THIS 12/2011 AND IT WAS VERY GOOD. THE SAUCE WAS THE BEST, WOULD BE GOOD ON STEAK OR CHICKEN.
