Poached Eggs on Baguette with Goat Cheese 0 Picture


  • For Vinaigrette:
  • Baguette, sliced
  • Olive oil to brush
  • S&P
  • 3 oz. fresh goat cheese
  • 2 thinly sliced heirloom tomatoes
  • 4 large eggs, poached
  • 1 cup arugula
  • 1/4 cup white wine vinegar
  • 1 tsp Dijon mustard
  • 1-1/2 tsp chopped fresh tarragon
  • 1/2 tsp kosher salt
  • 1/2 cup EVOO
  • 1 tsp honey
  • 1/2 tsp black pepper

Step 1

Heat grill pan & broiler. Brush the halved baguette with oil and season with S&P. Grill & spread with goat cheese. Place bread under broiler & broil until cheese is loghtly golden brown. Top each slice of bread with tomato and a poached egg.
Whisk vinegar, mustard, tarragon & salt in medium bowl, slowly whisk in oil until emulsified, whisk in honehy & black pepper.
Toss arugula with a few tsps of vinaigrette and S&P. Top each bread slice with arugula & drizzle with more vinaigrette
