Ingredients

  • 1 1/2 c. butter, softened
  • 2 c. sugar
  • Grated zest of 1 small orange
  • 1 egg
  • 2 tsp. vanilla extract
  • 3 c. flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1 1/2 c. dried cranberries
  • 1 1/2 c. sweetened, dried coconut

Step 1

Preheat oven to 350 degrees F.
With the mixer on medium speed, beat butter, sugar, orange zest, egg, and vanilla until
smooth. In another bowl mix flour, baking powder and salt.
Add butter mixture and beat on low speed for about 5 minutes.
Stir in dried cranberries and coconut. Shape dough into 1-inch balls and place 2 inches apart
on parchment paper lined baking sheets. Bake for 8 minutes.
Remove from oven and allow cookies to cool on baking sheets for 5 minutes.
Makes about 6 dozen.
If the dough is too dry and crumbly, knead it a little.
If it's still too dry, add some orange juice.
For a crisper cookie, bake for 10 minutes.
