Ingredients
- Glaze:
- Vegetable spray for the pan
- Flour to dust the pan
- 1 (18.25 oz) plain yellow or lemon cake mix
- Half a (3.4 oz) vanilla instant pudding mix, 4
- tablespoons
- 1/4 cup sugar
- 2/3 cup water
- 1/2 cup oil
- 1/3 cup lime or key lime juice
- 1/4 cup tequila
- 2 tablespoons triple sec
- 1 teaspoon grated lime zest
- 4 large eggs
- 1 1/4 cups powered sugar, sifted
- 1 tablespoon tequila
- 1 tablespoon triple sec
- 1 tablespoon lime juice
- 1 lime, cut into thin slices
- 1- 2 tablespoons coarse sugar

Preparation
Step 1
1. Preheat oven to 350.
2. Lightly spray a 12-cup bundt pan and dust with flour.
Shake out excess flour.
3. In a large bowl, combine the cake mix, pudding,
sugar, water, oil, lime juice, tequila, triple sec, lime
zest and eggs.
4. Beat with an electric mixer on low speed for 1
minute. Scrape the sides of the bowl.
5. Increase mixer speed to medium and beat for 2
minutes more. The batter should be thick and
smooth.
6. Pour batter into pan.
7. Bake for 42-47 minutes or till cake springs back
when lightly pressed with a finger.
8. Cool on a wire rack for 20 minutes.
9. Run a long knife along the edge of the cake and
invert onto a serving platter.
Cool 25 minutes longer.
Glaze:
1. Whisk powdered sugar, tequila, triple sec and lime juice together in a small bowl until smooth.
2. Poke holes in top of the cake.
3. Spoon glaze on top of the cake or use the squeeze
bottle.
4. Garnish with lime slices & coarse sugar, optional.
Cool 10 minutes before slicing.
