Ingredients

  • 2 cups sour cream
  • 1/3 milk
  • 2 13 oz cans tomatillos, drained
  • 2 cloves garlic
  • 1 T minced fresh cilantro
  • 2 T veggie oil
  • 1 cup chopped onions
  • 2 4oz cans diced green chilies
  • 12 6 inch cans corn tortillas, cut into quarters
  • 2 1/2 cups shredded, cooked chicken
  • 2 cups shredded Monterey Jack cheese

Preparation

Step 1

Mix sour cream and milk - set aside
In a food processor, blend tomatillos, garlic and cilantro
In skillet, heat oil and cook onions and chilies
Mix onion and chili mixture with tomatillo mixture and set aside
In microwave, warm tortillas 30 seconds and spread 1/3 of tortillas over bottom of 3 qt casserole
Layer 1/2 of chicken, 1/3 sauce, 1/3 of sour cream, 1/3 of cheese. Repeat layers. Top with layers of remaining tortillas, sauce, sour cream and cheese.

A delicious casserole layered with tortillas, chicken, chilies, cheese and sour cream. This dish is best assembled ahead of time and heated before serving.
