Ingredients

  • 3 eggs
  • 2 c. 1% milk heated to 110'
  • 3 tbs. butter melted
  • 2 c. bread flour
  • 1 tsp. salt
  • 1 tsp. sugar

Preparation

Step 1

1. Adjust rack to lower middle. Preheat 450*.

2. Grease 6-cup popover pan, dust with flour.

3. Whisk eggs until light and foamy in medium bowl, slowly whist in milk and butter.

4. Combine flour, salt, sugar, in large bowl. Whisk 3/4 of milk mixture into flour mixture until no lumps. Put batter into large measureing cup. Cover with plastic, let rise 1 hour.

5. Whisk batter to recombine pour into popover pan. Bake 20 min until just start to turn brown. Without opening the door, lower temp to 300*. Bake 35-40 min.

6. Poke small hole in top with skewer. Bake 10 min longer. Put popover pan on wire rack, poke again. Let cool 2 min take out of pan and serve.
