  • 1 1 1/2 1/4 1/2 mild Mexican pasteurized prepared cheese product, cubed; 1/2 teaspoon salt; 1/4 teaspoon pepper; 1/2 cup (2 oz) shredded Cheddar cheese.

Step 1

Cook rice according to package directions; set aside.

Melt margarine in a large skillet over medium heat; add bell pepper and onion and sauté 5 minutes or until tender.

Stir in cooked rice, cream-style corn, and next 6 ingredients; spoon into a lightly greased 3 ½ quart baking dish.

Bake at 350 degrees for 30 minutes or until thoroughly heated; top with shredded cheese, and bake 5 more minutes or until cheese melts. Yield: 10 to 12 servings. Prep time: 25 min. Bake time: 35 minutes.
