Ingredients
- 5 lb. Bottom round roast
- 1 large onion chopped
- 3 tablespoons garlic
- 2 tablespoons salt; 1 1/2 tablespoons pepper
- 12 carrots sliced lengthwise
- 5 lbs. Small red potatoes

Step 1
Put roast in large stockpot. Add water, salt, pepper, garlic salt and onions to the pot roast and cook until roast is almost done. Cool. Strain broth and save. Discard onions and garlic that remain in the strainer.
Peel carrots, slice lengthwise and blanch in a blancher for 3 minutes. Cut potatoes into quarters and partially cook. Cut up pot roast into bite sized pieces and combine with carrots, potatoes and broth. Simmer until tender. Serve hot with biscuits or cornbread.
