Ingredients
- 1 teaspoon Italian seasoning, divided
- 1/2 teaspoon black pepper, divided
- 1 pound boneless top loin beef steak, trimmed
- Water/oil mixture
- 1 medium red bell pepper, julienne
- 1 medium yellow bell pepper, julienne
- 1 medium onion, julienned
- 6 cloves garlic, peeled and thinly sliced
- 1 (14.5-oz.) can diced tomatoes, drained
- 1 teaspoon balsamic vinegar

Preparation
Step 1
Preheat oven broiler. In a small bowl, combine 1/2 teaspoon of Italian seasoning and 1/4 teaspoon of black pepper; rub mixture over both sides of steak; set aside. Spritz a large skillet with a tight-fitting lid with water/oil mixture over medium-high heat; saute bell peppers, onion and garlic until tender-crisp. Stir in tomatoes and remaining Italian seasoning and black pepper. Reduce heat, cover and simmer for 5 minutes. Remove from heat; stir in vinegar. Keep warm. Place steak on a broiler pan coated with water/oil mixture; broil 4 to 6 inches from heat source for 4 to 8 minutes per side or until steak reaches desired level of doneness. Let stand for 5 minutes before slicing; serve with vegetable mixture.
SERVING SUGGESTION: Steamed new potatoes and steamed asparagus.
GLUTEN FREE: Make sure Italian seasoning, tomatoes and balsamic vinegar are gluten free.
