Ingredients
- Topping:
- 1 3/4 cups cake mix from a 18.25
- 1/2 cup water
- 1/2 cup slivered almonds finely ground
- 3 tablespoons vegetable oil
- 1/2 teaspoon almond extract
- 2 eggs
- 3 cups assorted fruit
- 3/4 cup apricot preserves
- 3 tablespoons apple juice
- 3 tablespoons sliced almonds

Preparation
Step 1
Heat oven to 350. Spray bottom and sides of a 8 or 9 inch round pan.
In a large bowl beat cake mix, water,ground almonds,oil,almond extract and eggs with mixer. Pour into prepared pan.bake as directed on the box for 8 or 9 inch rounds. Remove from pans and cool completely.
Place berries in the bowl. In a sauce pan heat preserves and apple juice to boil and stir. Pour over berries until well coated. Let stand 5 minutes.
Gentle cut off the dome of the cake to make it level. place on a plate cut side down. Arrange berries on the cake drizzle with remaining syrup. Sprinkle with almonds.
