Ingredients

  • 6 tbsp melted butter, divided
  • 4 cups cubed French bread or sourdough bread
  • 1/3 cup Parmesan cheese
  • 2 tbsp chopped fresh parsley
  • 1 medium sweet onion, sliced
  • 1 (8 oz) pack mushrooms, sliced
  • 1 cup dry white wine
  • 1 (10 3/4 oz) can cream of mushroom soup
  • 1/2 cup drained and chopped, jarred roasted red bell peppers
  • 2 1/2 cups shredded, cooked chicken

Preparation

Step 1

Preheat oven to 400.
Toss 4 tbsp melted butter with next 3 ingredients.
Saute onions in 2 tbsp butter in a large skillet over medium-high heat for 15 minutes. Add mushrooms; saute 5 minutes. Stir in wine and next 3 ingredients. Cook, stirring constantly, 5 minutes or til bubbly.
Spoon mix into lightly greased 9-inch square baking dish; top evenly with bread mix.
Bake for 15 minutes or til golden.
