Ingredients

  • 6 whole eggs
  • 2 tbs heavy cream
  • 1/4- 1/2 cup chopped onions
  • 1/2 cup fresh spinach
  • 1/4- 1/2 cup chopped red bell pepper
  • 1/2 cup precooked chicken breast, chopped (optional)
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp dill or sage
  • salt and pepper to taste

Step 1

Directions: Pre-heat oven to 350 degrees.

Spray a muffin tin with olive oil nonstick spray or coat with coconut oil.

Mix the eggs and heavy cream together in a bowl. Then add the onions, spinach, red bell pepper, and chicken breast into bowl and mix together. Add seasonings and mix well.

Pour mixture into muffin tins -fill them about 1/2 way.

Place in oven for approximately 10-15 minutes or until toothpick comes out clean.

Tip: Use whatever veggies you like! Also, you can use your favorite meat in place of the chicken breast. Use fun-shaped muffin tins to make it even more "fun" for your kids.
