Clafouti (Fruit Flan)
- 3 c. pitted Cherries, diced Plums, Blueberries,
- diced Peaches, diced Apricots, etc (all 1
- fruit or a mixture of different ones)
- 1-1/4 c. Milk
- 1/3 c. Sugar (use Splenda)
- 1 Tbsp. Vanilla
- 1/8 tsp. Salt
- 2/3 c. Flour
- 1/3 c. Almonds, Pecans (optional)
- 1/3 c. Sugar
Preheat oven to 350°.
Place all ingredients except nuts and second 1/3 c. sugar in a blender (I put eggs in first and beat, then add the splenda, then gradually add flour alternately with milk, then vanilla and salt). Blend all until smooth. You can also do it with an electric mixer, or by hand with a whisk.
Pour 1/4" of layer in bottom of 9" pie dish. Cook in microwave on high for 4 minutes. Remove. Arrange fruit over batter in pan, then pour on remaining batter, spreading evenly as possible over fruit. Sprinkle on nuts evenly, then sprinkle on remaining 1/3 c. of sugar.
Place on middle rack of preheated oven and bake about 1 hour. Sprinkle top with xx sugar just before serving. The clafouti need not be served hot, but should still be warm. It will sink slightly as it cool.
